The Ritz Carlton Hong Kong may no longer be the highest hotel in the world but now there’s a new reason to visit. Chef Pino Lavarra has moved from the Amalfi Coast to head up Tosca, the Ritz’s Italian restaurant on the dizzying 102nd floor. Having achieved two Michelin stars in his native Italy, Lavarra brings with him immense technical skill and an exquisite artistic touch. I won’t spoil the surprise of the petit fours but let’s just say they are heaven sent.
UPDATE: Tosca was awarded a Michelin star 8 months after Chef Pino joined.
